Carrot Cake & Cream Cheese Frosting

The best part of the carrot cake has to be the cream cheese frosting. Of course, the carrot cake has to be sweet and moist from the pineapples. But the cream cheese frosting gives the cake the creaminess that makes you want to come back for more. I find that the cake tastes the best on the second day, it becomes ultra-moist with all the flavors well-blended together. So bake the cake one day before and let it cool off in the fridge before adding the cream cheese frosting!

Ingredients:

  • Carrot Cake
  • 250g grated carrots
  • 300g flour
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 1 tsp ground cinnamon (optional: 1/4 tsp nutmeg, 1/4 tsp ground cloves, 1/4 tsp ground ginger)
  • 4 eggs
  • 200g brown sugar
  • 180g vegetable oil
  • 130g natural plain yogurt or apple sauce
  • 130g crushed pineapple (from a can)
  • optional: 80g shredded coconuts; 80 grams chopped nuts - such as pecans and walnuts; 50 grams raisins

Cream Cheese Frosting

  • 120g cream cheese (softened)
  • 70g butter (softened)
  • 80 g sugar
  • 1/2 tsp vanilla
  • optional: half a lemon zest

Steps for carrot cake and cream cheese frosting:

Carrot Cake

  1. Preheat oven tp 350 F and prepare the cake tin by lightly oiling the surface.
  2. Next, grate the carrots. and set aside.
  3. In a large bowl mix the flour, baking soda, baking powder, and cinnamon together. Sift the mixture and set aside.
  4. In another bowl, add the eggs, sugar, vegetable oil, and yogurt together.
  5. Then make a well in the middle of the flour and add the wet ingredients into it.
  6. Once the mixture is well blended, fold in the grated carrots and crushed pineapple.
  7. Then, bake the cake for 1 hour and inserted a toothpick into the cake and make sure it comes out clean.
  8. Let the cake cool before adding frosting.

Cream Cheese Frosting

  • First, grate the lemon for the zest and squeeze out the lemon juice.
  • Next, mix together the cream cheese, sugar, vanilla, butter, lemon zest, and lemon juice until smooth.
  • Wait until the cake has cooled and spread the frosting evenly on top of the cake.
