We wanted to have something light and gluten-free for breakfast so we tried making gluten-free banana pancakes without using any flour. To our surprise, the banana pancakes were light, fluffy, and fruity.
Ingredients:
- 2 eggs
- 2 bananas
- 4 tbsp rolled oats
- (makes about 12 small pancakes)
Steps for banana pancakes:
- Mash the bananas, add in the eggs and oatmeals and mix well.
- Let the dough rest of 10-15 minutes for the oatmeals to soak in the moisture. If you like the texture of the oatmeal to remain, use the dough right away.
- Pour small portions onto the pan and heat both sides of the pancakes.
- Serve with fruit preserves or maple syrup.
