Gluten-Free Banana Pancakes

We wanted to have something light and gluten-free for breakfast so we tried making gluten-free banana pancakes without using any flour. To our surprise, the banana pancakes were light, fluffy, and fruity.

Ingredients:

  • 2 eggs
  • 2 bananas
  • 4 tbsp rolled oats
  • (makes about 12 small pancakes)

Steps for banana pancakes:

  1. Mash the bananas, add in the eggs and oatmeals and mix well.
  2. Let the dough rest of 10-15 minutes for the oatmeals to soak in the moisture. If you like the texture of the oatmeal to remain, use the dough right away.
  3. Pour small portions onto the pan and heat both sides of the pancakes.
  4. Serve with fruit preserves or maple syrup.
