Favorite Banana bread

I love this Favorite Banana bread recipe, it turns over-riped bananas into wonder every time I bake it. Because I reduced the amount of sugar in this recipe, it is actually a wonderful loaf to have for breakfast with some honey or jams. It is also very good with chocolate chips, raisins or walnuts.

Ingredients:

  • butter: 1/2 cup
  • sugar (option: substitute with brown sugar): 1 cup
  • large eggs: 2
  • flour (option: mix in whole wheat and milled flaxseed): 1 1/2 cups
  • baking powder: 1/2 teaspoon
  • baking soda: 1/2 teaspoon
  • mashed banana: 1 - 1/1/2 cups (approx. 2 large size banana)
  • sour cream: 1/2 cup
  • 1 teaspoon vanilla
  • chocolate chips, raisins or walnuts (optional)

Steps to make banana bread:

  1. Preheat the oven at 375F and butter baking pan.
  2. In a large bowl mix the butter and sugar until it is light and creamy.
  3. Add in the eggs one by one, the butter and eggs may separate but no worries, it will come together when the dry ingredients are added in.
  4. Next, add in all the dry ingredients and mix the batter gently until everything comes together.
  5. In another bowl mash the banana and then add it into the batter and mix well.
  6. Finally, mix in the optional raisins or chocolate chips.
  7. Bake for 30-40 mins (15-20 mins for cupcakes) and make sure to do the toothpick test.

*Try to use ripe bananas for natural sweetness, but do not use more than 1.5 cups of bananas, the batter will become too soggy.
